These are loaded with egg white protein and three different types of cheese: feta cheese, cottage cheese, and mozzarella. They make the proteinaceous breakfast velvety and rich. With all this, you also get some fiber and iron from egg white bites. The spinach is in here to make up for the vegetable part of your diet.
Firstly, preheat the oven. Keep the temperature to 350 degrees Fahrenheit. Spray a silicone muffin tray with non-stick baking spray. Use a 12-cup muffin tray. After spraying, place it on a baking sheet.
Take a blender and add cottage cheese, mozzarella cheese, feta cheese, and egg whites. Blend them so that you get a bubbly and fine mixture. It can take 30-40 seconds.
Fill the silicone cups with divided portions of pepper and spinach. Then fill egg white and cheese mixture on the top. Fill just slightly below the top edge of the cup. Sprinkle some salt and black pepper according to your taste preference.
Transfer the baking sheet to the preheated oven. Use the middle rack of the oven.
Then pour some boiling water into the baking tray. Keep its level about half the level of silicone liners.
Bake for about 30 minutes and observe until the top of the egg whites looks cooked and firm. Bake more if needed. Then take out the tray. Let it cool for 5 minutes. Take out the egg bites from the muffin tray and serve. Bon Appetit!
