This meatloaf can be easily made at home and unlike many other fancy recipes, you do not have to work all day to make it. It just a few minutes for preparation and then does its job. So what are you waiting for? Let’s make it together.
Heat the oven to 350 degrees Fahrenheit. Take a medium-sized bread mold and spread the bacon strips in it. The strips should cover the sides and bottom of the mold. Keep 2 bacon strips to use later.
Take the remaining bacon strips and mince them in a food processor. Then take a large bowl and add the minced bacon, minced beef, tomato sauce, onion, garlic, oregano, salt, and freshly cracked black pepper. Mix them thoroughly.
Then wash your hands and knead the minced meat mixture using your hands so that all the ingredients will combine completely and evenly.
Then add egg and again mix. Lastly, add bell pepper, parsley, and tomato to incorporate in the meat mixture.
Transfer this beef mixture into the bread mold you previously lined with the bacon strips. Then press the mixture and make it into an elongated ball that takes up the shape of the bread mold.
Over the meatball, place the bacon strips in such a way that they overlap with themselves and completely wrap around the meatball.
With an aluminum foil, cover the bread mold containing the meatball covered with bacon strips. Then bake it in the oven for about 25 minutes.
After 25 minutes have passed, take out the mold from the oven and remove the aluminum foil. Then place the mold again in the oven. Increase the temperature of the oven to 450 degrees Fahrenheit and cook the meatloaf again for 10 minutes. Observe when the bacon turns crispy from the edges and golden in color.
Take out the meatloaf, and let it cool for 5 minutes. Slice it and serve it with parsley. Spanish meatloaf is ready. Bon Appetit!
