Delmonico Steak Recipe

Delmonico steak is a traditional steak that has a basic and simple flavor. This steak is seasoned with the two most fundamental seasonings, salt and black pepper, and topped with meat butter. The meat butter is velvety and rich with earthy flavors of thyme and bay leaves. It gives the steak a more rich and juicy texture and enhances its overall flavor.

Ingredients
  

  • 6 20 -ounce Rib-eye steak
  • Salt = to taste
  • cup Extra virgin olive oil
  • Coarsely ground black pepper= to taste

For Meat Butter:

  • 1 lb (4 sticks) Unsalted butter
  • 3 Fresh bay leaves
  • 2 tbsp Sea salt
  • 1 tbsp Fresh thyme leaves

Instructions
 

  • Add the salt, thyme, and bay leaves in a spice grinder. Grind them all until a powdery mixture is obtained. 
  • Take a bowl and add the unsalted butter to it. Then add spice mixture. Blend them so that the spices are combined with butter.
  • Take a cling film and wrap the butter mixture in it. Then roll it into a log of 3 cm diameter. Refrigerate the log and use it whenever needed.
  • Preheat your grill and dry the steaks by patting them with paper towels. Then on one side, season with salt and coarsely ground black pepper.
  • Grill the steak by placing the side which has been seasoned, down on the hot grill. Grill for 3 minutes. Then season the top side of the steak with the same ingredients, flip it, and again grill for 3 more minutes.
  • After 3 minutes, dish it out on the platter. Brush both sides of the steaks with olive oil, sparingly. 
  • Return the steak to the grill. Grill it until it is thoroughly cooked from the inside and the outside is charred.
  • Transfer the steaks onto plates.  Give it a break of 5 minutes. Meanwhile, cut the meat butter log cross-sections into 1.25 cm thick slices. Top the steaks with these slices, one slice on each steak. Serve. Bon Appetit!
