How to Make Delmonico Steak?

To make Delmonico Steak, you need the following ingredients:

  • Rib-eye steak = six 20-ounce
  • Salt = to taste
  • Extra virgin olive oil = ⅓ cup
  • Coarsely ground black pepper = to taste

  • Unsalted butter = 1 lb (4 sticks)
  • Fresh bay leaves = 3
  • Sea salt = 2 tbsp
  • Fresh thyme leaves = 1 tbsp

Step-by-Step Guide for Making Delmonico Steak Recipe

Follow this step-by-step guide to make Delmonico Steak:

Step 1

Add the salt, thyme, and bay leaves in a spice grinder. Grind them all until a powdery mixture is obtained. 

Step 2

Take a bowl and add the unsalted butter to it. Then add spice mixture. Blend them so that the spices are combined with butter.

Step 3 

Take a cling film and wrap the butter mixture in it. Then roll it into a log of 3 cm diameter. Refrigerate the log and use it whenever needed.

Step 4

Preheat your grill and dry the steaks by patting them with paper towels. Then on one side, season with salt and coarsely ground black pepper.

Step 5

Grill the steak by placing the side which has been seasoned, down on the hot grill. Grill for 3 minutes. Then season the top side of the steak with the same ingredients, flip it, and again grill for 3 more minutes.

Step 6

After 3 minutes, dish it out on the platter. Brush both sides of the steaks with olive oil, sparingly. 

Step 7

Return the steak to the grill. Grill it until it is thoroughly cooked from the inside and the outside is charred.

Step 8

Transfer the steaks onto plates.  Give it a break of 5 minutes. Meanwhile, cut the meat butter log cross-sections into 1.25 cm thick slices. Top the steaks with these slices, one slice on each steak. Serve. Bon Appetit!

  • You can make the meat butter log beforehand to save your time.
  • The log can also be stored in the fridge for 2 weeks and freezer for 3 months. Whenever you need that, just take it out and cut it into slices. Remove the cling film and serve. In the case of frozen butter, first thaw it.
