Looking at health benefits and cooking time, I decided to try this savory recipe in my kitchen. And surprisingly, my kids loved this chicken fajita topped with cheese and cream. Ingredients
  

  • 1 pound Chopped skinless boneless chicken breasts
  • 1 medium Chopped onion
  • 1 medium Chopped yellow, green, and red pepper
  • 2 tablespoon Olive oil
  • 2 cups Frozen corn
  • 1 cup Mexican cheese blend, shredded
  • 1 cup Brown rice, uncooked
  • Tortilla chips
  • Minced fresh chives
  • 1 cup Sour cream
  • 4 cups Water
  • 1 can Green enchilada sauce
  • 1 can Chopped green chilies
  • ¼ teaspoon Salt

Instructions
 

  • Turn ON a Dutch oven and keep the flame from medium to high.
  • Place all the ingredients including onion, peppers, and chicken in the oil.
  • Continue cooking and stirring at medium flame till vegetables get tender and crispier.
  • Add corn, enchilada sauce, chiles, water, and rice into it. Also, sprinkle salt to get the flavor and stir the whole mixture. 
  • Once the mixture is boiled, reduce the heat intensity and cover the pot.
  • Allow it to simmer for some time till the rice turns tender. 
  • Turn Off the heat. Add sour cream and cheese to it. Stir the cheese thoroughly to melt it. 
  • Delicious chicken fajita chowder is ready to serve. Enjoy having it along with chives and chips.
