Campbell’s Chicken Tortilla Soup Recipe

Ingredients
  

  • 250 g Boneless and skinless chicken breasts
  • 1 tbsp Fresh cilantro leaves, chopped
  • 1 tsp Ground cumin
  • 1.5 cup Frozen corn niblets
  • ½ cup Chunky medium salsa
  • Crisp tortilla strips
  • 900 ml (1 box) Campbell’s organic chicken broth
  • cup Uncooked white rice
  • 2 tbsp Freshly squeezed lime juice
  • ¼ cup Chopped green or red pepper

Instructions
 

  • Cut the chicken breasts into smaller chunks. 
  • Spray a large saucepan with a cooking spray. Place it on the stovetop on a medium-high flame. 
  • Add the chicken chunks to the saucepan and keep stirring occasionally. Cook until the chicken gets browned. Cook from all sides evenly.
  • Then add Campbell's organic chicken broth to the long-grain white rice. Add one teaspoon of ground cumin and stir to combine. Heat until boiled. Then cover the saucepan and cook for another 20 minutes.
  • On a low flame, place a saucepan and add cilantro, corn, salsa, pepper, and lime juice. Mix and heat them until they are cooked well. Then top with crisp tortilla strips. 
  • Yummy and healthy Campbell’s Chicken Tortilla Soup is ready. Serve it with your favorite vegetables on the top. Bon Appetit!
