1tablespoonbaking powder
¼teaspoonsalt
½cupunsalted butter
½cupbrown sugar
¼cupgranulated sugar
1 3.4ouncebox Jell-O Cheesecake Pudding Mix do not use sugar-free or cheesecake filling mix
1teaspoonvanilla extract
2eggs
1cupwhite chocolate chips
¼cupraspberry preserves
Parchment or wax paper
Instructions
Set aside flour, salt, and baking powder in a medium bowl.
Melted butter, brown sugar, and white sugar are combined in a second large mixing bowl. You can use a standing mixer or a hand-held mixer to beat the mixture until it becomes light and fluffy.
Put both eggs and vanilla extract into a mixing bowl. Until combined, beat just until smooth.
Mix well the cheesecake Jell-O mix with the pudding mix.
Pour the dry ingredients into the wet ingredients, and mix until a dough forms. Add white chocolate chips and fold until combined.
It is recommended that you chill the dough for at least 30 minutes to an hour.Preheat the oven to 350 degrees F once the dough has chilled. Make sure a baking sheet is non-stick by spraying it with non-stick spray.
On parchment (or wax) paper, scoop dough using a 1 1/2 tablespoon cookie scoop.
It is best to flatten the dough by hand or with a spoon.
In a zip-top plastic bag, place about ¼ cup of jam. Small holes can be made by cutting the tip off one of the bottom corners.
Make small circles with the jam and squeeze/pipe them onto the cookie dough. Use a toothpick to spread it slightly.
After rolling the dough into a ball, place it on the baking sheet. Once all the dough has been used, repeat the process.
Until the edges are golden brown, bake for 9-11 minutes. It is recommended that you bake the cookies for approximately 15 minutes if you would like them crispier.
When cookies are completely cool, transfer them to a cooling rack.
Make sure the container is airtight before storing.
