A Smoked Roast Beef Recipe is a dish made from sliced beef that has been broiled or roasted over an open flame. The process of smoking the beef creates a smoky flavor and gives it a crispy outer crust.
Set your pellet smoker to 250°F. Pull your roast out of the fridge while it's preheating and let it warm up. Place the roast in the smoker after salting and peppering both sides.
Smoke for 2.5 hours (or until the meat reaches 160°F). Approximately 2.5 hours after roasting, quarter your onions. With the quartered onions and garlic cloves surrounding the roast, place it in a roasting pan. Once the rosemary and thyme springs have been placed on top, place the stick of butter on top.
Make sure your smoker is at 275 degrees. Wrap the roast in foil and smoke it for another 1.5 hours (or until the internal temperature reaches around 200 degrees).
