Ingredients
  

  • 2 pounds boneless skinless chicken breasts (about 3 large chicken breasts)
  • 1 1/2 Tablespoons mayonnaise
  • 3/4 cup panko crumbs
  • 1/3 cup freshly grated parmesan cheese*
  • 1 Tablespoon melted butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • Marinara sauce (optional, for serving)

Instructions
 

  • Ensure that the oven is preheated to 425 degrees F (218 degrees C). Prepare an aluminum foil-lined baking sheet.
  • To make even 6 chicken fillets, butterfly the chicken breasts all the way through. On the baking sheet, place the chicken.
  • Melt butter and combine panko crumbs, parmesan cheese, Italian seasoning, paprika, sea salt, ground black pepper, garlic powder, and fine sea salt in a medium bowl.
  • On top of the chicken breasts, evenly spread the mayonnaise. Into the panko mixture, turn the chicken breasts' mayonnaise side down. Put the chicken back on the baking sheet panko side up after pressing down on the crumbs to make them stick.
  • A thermometer reading of 165 F on the thickest part of the chicken indicates that the chicken has been baked for around 8 - 12 minutes.
