Ingredients

  • 8 jalapeno peppers
  • 8 ounces cream cheese or use 4 ounces cream cheese + 4 ounces shredded cheddar cheese
  • 1 teaspoon smoked paprika or more to taste
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Spicy red pepper flakes optional
  • 16 slices bacon or use 8 slices cut in half for smaller poppers

Instructions

  • Set your smoker to 300 degrees Fahrenheit.
  • Scoop out the insides of the jalapeno peppers by cutting them in half lengthwise.
  • Cream cheese, smoked paprika, garlic powder, salt, pepper, and red chili flakes should be combined in a bowl with the cream cheese (+ cheddar cheese, if using).
  • Make a spicy cheese mixture and fill each jalapeno pepper in half. Your peppers may have leftovers, depending on their size. You just need to distribute it evenly.
  • Place a slice of bacon on top of each stuffed jalapeno boat. Place toothpicks into the bacon to hold it in place.
  • For calorie savings, use half a bacon slice with smaller peppers.
  • Put the poppers into the smoker for 60-80 minutes until they are softened and the bacon is starting to crisp, then sprinkle with extra smoked paprika and red pepper flakes. In the end, you can broil them for a few minutes.
  • Serve after being removed from the heat and cooled slightly.
  • Remove from heat, cool slightly, and serve.
