Ingredients
  

  • 1 kg potatoes, purple
  • 75 g butter, unsalted
  • 100 ml milk
  • 100 ml double cream
  • ¼ cup chives, chopped
  • salt, to taste
  • pepper, to taste

Instructions
 

  • Prepare the potatoes by peeling them and cutting them into cubes of 1 to 2 cm.
  • In a saucepan of salted cold water, place the potatoes. Bring to a boil with the lid on
  • Make 1/4 cup of chives by chopping them.
  • Bring butter, milk, and double cream to a gentle simmer in a small saucepan.
  • When the purple potatoes are cooked, drain them and add them back to the sauce while it's still hot. Mix the creamy mixture slowly into the mashed potatoes.
  • Toss with salt and pepper and add 3/4 chopped chives.
  • Serve in a bowl. Finish with the left-over chives and a thin streak of double cream.
  • Warm the serving dish before serving.
