Prepare the potatoes by peeling them and cutting them into cubes of 1 to 2 cm.
In a saucepan of salted cold water, place the potatoes. Bring to a boil with the lid on
Make 1/4 cup of chives by chopping them.
Bring butter, milk, and double cream to a gentle simmer in a small saucepan.
When the purple potatoes are cooked, drain them and add them back to the sauce while it's still hot. Mix the creamy mixture slowly into the mashed potatoes.
Toss with salt and pepper and add 3/4 chopped chives.
Serve in a bowl. Finish with the left-over chives and a thin streak of double cream.
