Ingredients
  

  • 3 tablespoons Jerk Seasoning
  • 1 Chicken Breast
  • 9 ounces(250g) Penne Pasta
  • 1 tablespoon Olive Oil
  • ½ Red Bell Pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 1 Onion, sliced
  • 1 Jalapeno, minced
  • 1 Garlic Clove, chopped
  • ½ cup Chicken Broth
  • ¾ cup Heavy Cream (or half and a half)
  • Salt & Pepper
  • Parsley

Instructions
 

  • Follow the package instructions to make the pasta and strain it. You can set it aside for later use.
  • The oven should be preheated to 400°F (200°C). Season the chicken breast with jerk seasoning.
  • Heat a bit of olive oil in a non-stick skillet over medium heat. Cook the chicken breast until it is dark brown. Then transfer the chicken to a baking sheet and bake for another 15 minutes at 400°F (200°C).
  • To the same skillet, add more olive oil and sauté the peppers, garlic, onions, and jalapenos for 10 minutes, or until soft.
  • Then add the chicken broth and heavy cream and cook for another 10 minutes. Toss the pasta, green onions, and parsley in the sauce to coat.
  • Top with sliced chicken and Serve right away.
