2Poundsboneless (skinless chicken thigh meat, cut into 1-inch cubes)
½headiceberg lettuce (shredded)
2Roma tomatoes (diced)

Instructions
To prepare the chicken, mix the lime juice, garlic, taco seasoning mix, 1 tablespoon of oil, and brown sugar together. Massage into the meat and marinate for 4 to 5 hours. After the marinade has been drained, cut the chicken into 1-inch pieces.
Heat the remaining 1 tablespoon of oil in a pan over medium heat. Stir occasionally while cooking chicken until lightly browned and cooked through. Remove chicken from heat and keep warm.
The chicken can also be grilled over hot coals until nicely charred and cooked through. Remove from heat and cut into 1-inch pieces.
