Ingredients
  

  • 15 oz canned Mackerel in brine
  • 2 eggs
  • ¼ cup Grated Parmesan cheese
  • ½ cup Breadcrumbs
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Mustard
  • 2 tablespoons Chopped chives or scallion
  • Vegetable oil for frying

Instructions
 

  • Drain and debone the mackerel. Transfer to a mixing bowl. Flake the meat with a fork. Using a fork, flake the mackerel meat.
  • Mix well the remaining ingredients, excluding the vegetable oil. Prepare the mixture for the mackerel patties.
  • Prepare patties by measuring 1/4 cups and forming them into patties.
  • On medium heat, fry a small amount of vegetable oil until golden brown (about three minutes per side).
