15 oz canned Mackerel in brine 2 eggs ¼ cup Grated Parmesan cheese ½ cup Breadcrumbs 2 tablespoons Mayonnaise 2 tablespoons Mustard 2 tablespoons Chopped chives or scallion Vegetable oil for frying
Drain and debone the mackerel. Transfer to a mixing bowl. Flake the meat with a fork. Using a fork, flake the mackerel meat.
Mix well the remaining ingredients, excluding the vegetable oil. Prepare the mixture for the mackerel patties.
Prepare patties by measuring 1/4 cups and forming them into patties.
On medium heat, fry a small amount of vegetable oil until golden brown (about three minutes per side).
