3tablespoonsAgave syrup
1 1/4teaspoonsCinnamon (plus more for sprinkling on top)
¾teaspoonNutmeg
Four29-ounce cansSliced peaches (drained)
Kosher salt
1Orange
2eggs (whisked)
vanilla ice cream (for serving)
Instructions
Preheat the oven to 375 degrees F. Grease a 13- by a 9-inch baking pan with half a stick of butter (4 tablespoons). Place aside.
Roll out the pie crusts on a lightly floured surface until they are large enough to cover the baking pan.
Melt the remaining 1/2 stick of butter (4 tablespoons) in a large skillet.
Combine agave syrup, cinnamon, nutmeg, and peaches. Then, add 2 pinches of salt and stir well. Once the mixture begins to simmer, turn the heat down to low and continue cooking for 10 minutes. Once the mixture has cooled, discard it.
Place half of the peach mixture into the prepared baking pan in an even layer. Sprinkle half of the orange zest on top of the peaches. Place the first pie crust sheet on top. Put in the oven for 15 minutes until golden brown.
Turn off the oven and remove the cobbler. On top of the peach mixture, pour the remaining half of the peach mixture and grate the remaining orange zest. Spread a thin layer of egg wash on top, then sprinkle cinnamon on top.
Make holes in the top layer using a fork. By doing so, it will cook evenly and the steam will escape. For 40 minutes, bake the pie until the peach juices bubble up and the top crust becomes golden brown.
