Ingredients
  

  • 4 medium Sweet potatoes
  • ½ stick Butter (softened)
  • ¼ cup Sugar
  • ¾ cup Brown sugar
  • 2 eggs (beaten)
  • 1 teaspoon Pure vanilla extract
  • ½ teaspoon Ground cinnamon
  • 1/8 teaspoon Ground ginger
  • 1/8 teaspoon Ground nutmeg
  • 1/8 teaspoon Ground allspice
  • ½ teaspoon Salt
  • ¾ cup Evaporated milk
  • 1 unbaked Pie crust

Maple Whipped Topping:

  • 1 cup Heavy whipping cream
  • ¼ cup Confectioners' sugar
  • 2 tablespoons Maple syrup

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • On a baking sheet, place sweet potatoes and bake for 1 hour. Allow cooling.
  • Mash the pulp in a large bowl after scraping it out of the skin. Set aside.
  • Cream butter, sugar, and brown sugar together. Eggs, vanilla, cinnamon, ginger, nutmeg, allspice, and cinnamon are all added at this point.
  • Add evaporated milk to the sweet potatoes and stir. Combine with a mixer and pour into an unbaked pie shell.
  • Bake on the bottom rack of the oven for 1 hour or until the pie is firm in the center. Serve hot. You may add whipped cream if you wish.

Maple Whipped Topping:

  • Combine whipping cream and confectioners' sugar in a medium bowl. Pour maple syrup over the top. Whip together until soft peaks form.
