4 medium Sweet potatoes ½ stick Butter (softened) ¼ cup Sugar ¾ cup Brown sugar 2 eggs (beaten) 1 teaspoon Pure vanilla extract ½ teaspoon Ground cinnamon 1/8 teaspoon Ground ginger 1/8 teaspoon Ground nutmeg 1/8 teaspoon Ground allspice ½ teaspoon Salt ¾ cup Evaporated milk 1 unbaked Pie crust Maple Whipped Topping: 1 cup Heavy whipping cream ¼ cup Confectioners' sugar 2 tablespoons Maple syrup
Preheat the oven to 350 degrees Fahrenheit.
On a baking sheet, place sweet potatoes and bake for 1 hour. Allow cooling.
Mash the pulp in a large bowl after scraping it out of the skin. Set aside.
Cream butter, sugar, and brown sugar together. Eggs, vanilla, cinnamon, ginger, nutmeg, allspice, and cinnamon are all added at this point.
Add evaporated milk to the sweet potatoes and stir. Combine with a mixer and pour into an unbaked pie shell.
Bake on the bottom rack of the oven for 1 hour or until the pie is firm in the center. Serve hot. You may add whipped cream if you wish.
