Ingredients
  

  • 2-3 medium-sized Potatoes (chopped in cubes)
  • 1 cup Onions (Chopped)
  • ½ cup Vegetable oil
  • 5 cups Corned beef (chopped)
  • ½ tsp Salt and pepper to taste
  • 5-6 Eggs (kept at room temperature)
  • 1 ½ tsp Parsley to garnish

Instructions
 

  • Heat the vegetable oil in a large frying pan over medium heat. When the oil is hot, add the onion and potato cubes. Then fry them until they are brownish and soft.
  • Once the corned beef has been chopped, add it to the pan and fry for 5-6 minutes. Sprinkle salt and pepper on the beef and continue to stir so that it doesn't burn.
  • When the beef gets smoky, make six holes in the mixture with a spoon and break a few eggs into each hole. 
  • Then sprinkle some extra salt and pepper on the eggs and cover the lid to bake the beef and eggs for 10 minutes, until the tops of the eggs are brown and smoky.
  • Finally, remove the frying pan and garnish the upper part with fresh parsley and you're ready to serve Libby's corned beef hash recipe.
