The Dessert That Steals the Show — No Oven Required

There is something almost rebellious about a dessert this good that never sees the inside of an oven. The holidays roll around, every rack is occupied by roasting pans and casseroles, and yet you still want to put a showstopper on the table. This no bake pumpkin cheesecake is exactly that — a lush, cloud-soft, deeply spiced cheesecake that sets up beautifully in the refrigerator while you reclaim every single square inch of your oven for everything else. It is not a compromise. It is, genuinely, one of the best things you will make all season.

What makes this version so irresistible is the texture. We are talking about a filling that sits right at the intersection of airy mousse and dense, tangy cheesecake — the cream cheese gives it that signature richness and slight bite, while real pumpkin purée brings an earthy sweetness that feels like autumn in a bite. A generous hand with warm spices — cinnamon, ginger, nutmeg, and a whisper of clove — perfumes the whole thing without turning it into a pumpkin pie. The buttery graham cracker crust provides that satisfying crunch against the creamy filling, and the whole thing is crowned with billowing swirls of freshly whipped cream. The best part? You can — and absolutely should — make this a day ahead. The overnight chill gives the filling time to fully firm up and lets those spices deepen and bloom together into something far more complex than the sum of their parts. By the time you slice into it at the table, the filling is dense, satiny, and slices cleanly with a hot knife. Every plate looks like something from a high-end restaurant, and nobody needs to know how simple it really was.

Why You’ll Love This Recipe

  • Zero oven time — frees up your oven for the rest of your holiday feast without sacrificing one bit of flavor or impressiveness.
  • Silky, luxurious texture — the combination of whipped cream cheese, real pumpkin, and freshly whipped heavy cream creates a filling that is genuinely crave-worthy.
  • Deep, bold fall spice — we do not hold back on the warm spices, so every forkful delivers that signature autumn aroma and flavor.
  • Make-ahead magic — this cheesecake actually gets better overnight, making it the perfect stress-free dessert for entertaining.
  • Crowd-pleasing and crowd-sized — serves 10 to 12 generously, which means everyone at the table gets a proper slice, not a sliver.
  • No gelatin required — the structure comes purely from whipped cream and properly softened cream cheese, keeping the ingredient list straightforward and the process fuss-free.

Key Ingredients

The backbone of this dessert is full-fat block cream cheese — and this is not the place to reach for a low-fat substitute. Full-fat block cream cheese whips into a thick, luscious base that holds the filling together without any gelatin. It needs to be genuinely room temperature before you begin; cold cream cheese will leave you with a lumpy filling no amount of beating will fix. Right alongside it, canned pumpkin purée (not pumpkin pie filling, which is pre-sweetened and pre-spiced) gives the cheesecake its deep, earthy character and a gorgeous burnished-orange color that looks stunning against the pale crust. The pumpkin also adds natural moisture, which contributes to that melt-in-your-mouth softness.

Heavy whipping cream, beaten to soft peaks and then folded gently through the filling, is what elevates this from dense to dreamy — it introduces thousands of tiny air bubbles that give the final slice that almost mousse-like lift. Powdered sugar sweetens the filling without the grittiness that granulated sugar would leave behind, dissolving seamlessly into the cream cheese for a perfectly smooth result. The warm spice blend — cinnamon, ginger, nutmeg, and clove — is the soul of the whole recipe; do not skimp, and if you have a fresh jar of good-quality ground cinnamon, now is the time to use it. Finally, the graham cracker crust made with melted butter is the essential anchor: salty-sweet, crumbly-firm, and deeply satisfying against the silky filling above it.

Pro Tips & Variations

Tip 1 — Soften your cream cheese properly. Pull your cream cheese out of the refrigerator at least 1 to 2 hours before you plan to make the filling. It should feel soft and slightly warm to the touch. If you try to beat cold cream cheese, you will end up with a grainy filling that no amount of mixing will fully smooth out. The extra patience here pays off in a filling that is genuinely silky from the very first beat.

Tip 2 — Do not over-whip the cream. You want the heavy cream beaten to soft, pillowy peaks — not stiff peaks, and certainly not butter. Over-whipped cream loses its ability to fold smoothly into the filling, and you will end up with a slightly grainy texture. Stop beating the moment the cream holds a gentle, drooping peak.

Tip 3 — Press the crust firmly and evenly. Use the flat bottom of a measuring cup or a straight-sided glass to press the buttered crumbs into an even layer up the sides and across the bottom of your springform pan. A well-packed crust will hold together cleanly when you slice and serve — no crumbling, no collapsing.

Tip 4 — Chill for at least 6 hours, overnight is better. Resist the urge to rush this step. The chill time is what transforms the filling from a soft mousse into a properly set, sliceable cheesecake. If you are serving it for a holiday dinner, make it the night before and let it chill undisturbed. According to Serious Eats, cold-set cheesecakes benefit enormously from a long, slow rest — the proteins and fats set into a more cohesive, creamy structure when given adequate time.

Variation — Gingersnap crust: Swap the graham crackers for crushed gingersnap cookies. The spicy, slightly fiery snap of the ginger cookies against the creamy pumpkin filling is absolutely spectacular — a bold upgrade that serious pumpkin lovers will adore.

Variation — Chocolate drizzle: A drizzle of warm dark chocolate ganache over the top of the whipped cream adds a stunning visual contrast and a bittersweet edge that cuts through the sweetness beautifully. Melt 2 oz of dark chocolate with 2 tablespoons of heavy cream, drizzle, and let it set before serving.

Variation — Mini cheesecakes: Press the crust into the bottoms of a lined muffin tin and divide the filling among the cups. These individual portions are perfect for a dessert spread alongside our Pecan Pie Bars — Buttery Shortbread Base with a Rich, Gooey Pecan Filling — two irresistible bites, zero baking required for one of them.

Variation — Spiced caramel topping: Drizzle the finished cheesecake with a generous pour of thick salted caramel sauce before serving. The salty-sweet richness against the spiced pumpkin filling is pure indulgence. As Food Network’s test kitchen notes, adding a caramel layer to pumpkin cheesecake transforms it from a seasonal dessert into a true signature dish.

Nutritional Highlights

Each generous slice of this no bake pumpkin cheesecake delivers a satisfying richness from full-fat dairy — real cream, real cream cheese — along with the genuine nutritional benefits of pumpkin purée, which is naturally high in beta-carotene, vitamin A, and dietary fiber. The spices, particularly cinnamon and ginger, bring anti-inflammatory properties that are a lovely bonus in such an indulgent dessert. This is unabashedly a treat, clocking in at roughly 420 calories per slice, but every single one of those calories is doing something delicious. If you are mindful of portions, a smaller slice still delivers an incredibly satisfying hit of rich, spiced flavor — a little goes a long way when the filling is this good. If you are building out a full dessert table, we love pairing it with our Apple Slab Pie — The Ultimate Sheet Pan Apple Pie That Feeds a Crowd for a spread that covers every fall flavor base.

Equipment

  • 9-inch springform pan
  • Stand mixer or hand mixer
  • Large mixing bowls
  • Rubber spatula
  • Measuring cups and spoons
  • Offset spatula or the back of a spoon

Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs from about 14–15 full sheets, finely crushed
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter melted
  • 1/4 tsp fine sea salt

Pumpkin Cheesecake Filling

  • 16 oz full-fat block cream cheese 2 packages, softened to room temperature for 1–2 hours
  • 1 cup canned pumpkin purée not pumpkin pie filling
  • 1 cup powdered sugar sifted
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1 tsp pure vanilla extract
  • 1 1/2 cups heavy whipping cream cold, divided — 1 cup for the filling, 1/2 cup reserved for topping

Whipped Cream Topping

  • 1 cup heavy whipping cream cold
  • 3 tbsp powdered sugar
  • 1/2 tsp pure vanilla extract
  • ground cinnamon for dusting to finish

Instructions

Make the Crust

  • In a medium bowl, stir together the graham cracker crumbs, granulated sugar, cinnamon, and salt. Pour in the melted butter and mix until the crumbs are evenly moistened and resemble wet sand — the mixture should hold together when you squeeze a small amount in your fist.
  • Press the crumb mixture firmly and evenly into the bottom and about 1 inch up the sides of a 9-inch springform pan. Use the flat bottom of a measuring cup or straight-sided glass to pack it tightly and create a level base. Transfer to the refrigerator to chill for at least 20 minutes while you prepare the filling.

Whip the Cream

  • Pour 1 cup of the cold heavy whipping cream into a large clean bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed until soft peaks form — the cream should mound gently and the peak should droop over when you lift the beaters. Do not over-whip. Set aside.

Make the Cheesecake Filling

  • In a separate large bowl, beat the softened cream cheese on medium speed for 2–3 minutes until completely smooth, fluffy, and free of any lumps. Scrape down the sides of the bowl frequently.
  • Add the pumpkin purée, sifted powdered sugar, cinnamon, ginger, nutmeg, cloves, and vanilla extract. Beat on medium speed until the mixture is fully combined, smooth, and uniformly orange, about 2 minutes. Taste and adjust the spices if desired.
  • Using a rubber spatula, gently fold the whipped cream into the pumpkin cream cheese mixture in two additions. Use slow, wide folding strokes from the bottom of the bowl up and over — do not stir or beat, as you want to preserve the air in the cream. Fold only until just combined and no white streaks remain.

Assemble and Chill

  • Spoon the filling into the chilled graham cracker crust and use an offset spatula or the back of a large spoon to smooth it into an even layer. Gently tap the pan on the counter a couple of times to release any air pockets.
  • Cover the pan loosely with plastic wrap and refrigerate for a minimum of 6 hours, or overnight for best results. The cheesecake is ready when the filling is firm, set, and does not jiggle in the center when you gently shake the pan.

Top and Serve

  • Just before serving, make the whipped cream topping: beat the remaining 1 cup of cold heavy cream with the powdered sugar and vanilla extract until soft, billowy peaks form.
  • Run a thin knife around the inside edge of the springform pan, then release and remove the collar. Transfer the cheesecake to a serving plate or cake stand. Dollop or pipe the whipped cream generously over the top, and dust lightly with ground cinnamon. Slice with a sharp knife dipped in hot water and wiped clean between cuts for the cleanest slices. Serve immediately.

Notes

Make-Ahead: This cheesecake keeps beautifully in the refrigerator for up to 4 days, covered. Add the whipped cream topping just before serving for the best presentation.
Freezing: The cheesecake (without whipped cream topping) can be frozen for up to 1 month. Wrap tightly in plastic wrap and then in foil. Thaw overnight in the refrigerator before topping and serving.
Crust Variation: Substitute gingersnap cookies for the graham crackers for a spicier, more complex crust that pairs beautifully with the pumpkin filling.
Key Tip: Your cream cheese MUST be fully softened to room temperature — this is the single most important step for a smooth, lump-free filling. Do not rush it.
