Ingredients
  

FOR THE GRAHAM CRACKER CRUST

  • 2 cups graham cracker crumbs
  • 1⁄3 cup confectioners' sugar
  • 1⁄2 teaspoon cinnamon
  • 6 tablespoons butter, melted and cooled

FOR THE FILLING

  • cup mango, pureed
  • 6 egg yolks
  • 1⁄2 cup key lime juice
  • 2 (14 ounces) cans of sweetened condensed milk
  • 1⁄2 cup mango, diced
  • 3 cups whipped cream

Instructions
 

  • Set the oven to 350 degrees Fahrenheit.
  • The crust is made by combining cracker crumbs, sugar, cinnamon, and butter in a large bowl and mixing well. Mix well and press into a 10-inch pie pan. Separately set aside.
  • To make the filling, process mangoes in a food processor (or blender). In a mixing bowl, combine the egg yolks, lime juice, and the two cans of milk. Mix well, combining well. To keep the diced mango intact, use a rubber spatula to fold it in.
  • Bake for 20 to 25 minutes after pouring the mixture into the crust. Remove the pie from the oven and allow it to cool completely. Be sure to keep it refrigerated until you are ready to serve it. Whip fresh cream on top.
