Ingredients
  

  • 2 red onions peeled and roughly chopped
  • 1 head of garlic cloves peeled and roughly chopped
  • 1 cup African bird's eye chilies stem removed
  • 2 red bell peppers seeds were removed and roughly chopped
  • 3 ripe tomatoes skins were removed and roughly chopped
  • 4 tablespoons olive oil
  • juice and zest of 3 lemons
  • cup red wine vinegar
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 teaspoon cracked black pepper
  • 2 bay leaves
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika

Instructions
 

  • In a food processor or blender, combine all ingredients and blend until finely chopped and sauce-like.
  • Pour the sauce into a saucepan over medium heat and simmer for 20 minutes, stirring occasionally to prevent burning.
  • Check the seasoning after 20 minutes and adjust as necessary. Lemon and vinegar should provide a sourness and spice to the sauce.
  • For up to two weeks, keep in the refrigerator in jars or bottles.
