Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
  • 1 zucchini, halved lengthwise and thinly sliced into half-moons
  • 3 medium tomatoes, halved and thinly sliced into half-moons
  • 2 yellow bell peppers, thinly sliced
  • ½ red onion, thinly sliced
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. Italian seasoning
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup shredded mozzarella
  • Freshly chopped parsley , for garnish

Instructions
 

  • Prepare the oven by preheating it to 400 degrees. Stuff chicken breasts with red onions, zucchini, tomatoes, and bell peppers before cutting slits through them.
  • Season with Italian seasoning, salt, and pepper and drizzle with oil. Serve with mozzarella sprinkled on top.
  • In a baking dish, bake chicken until it is cooked through and the inside is no longer pink, about 25 minutes.
  • Before serving, garnish with parsley.
