Ingredients
  

  • 3 pounds Yukon gold potatoes
  • cup salt for seasoning the water
  • ¼ cup sour cream at room temperature
  • 4 tablespoons butter at room temperature
  • 1 cup cream at room temperature
  • 2 teaspoons truffle zest
  • 1 tablespoon truffle oil
  • 2 teaspoons salt

Instructions
 

  • Cut the potatoes into cubes. With the ⅛  cup of salt, add the water to a pot that is boiling.
  • Boil potatoes for 20-25 minutes, until they can be easily pierced with a fork. Be sure to drain thoroughly.
  • Add butter, sour cream, butter, cream, truffle oil, truffle zest, and salt (with a potato masher). Don't overwash the potatoes or they will become gluey.
