Red Velvet Pie Recipe

This is a very easy dessert to make and it only takes less than 3 hours. It's rich in decadent syrupy ingredients, perfectly complemented by chocolate graham crackers, granulated sugar, and cream cheese butter topping.

Ingredients
  

FOR THE CRUST:

  • 1 ½ cups chocolate graham crackers 
  • cup unsalted butter, melted 
  • 3 tablespoons granulated sugar 

FOR THE FILLING:

  • 1 ½ cup whole milk 
  • 1 cup heavy whipping cream
  • ½ cup granulated sugar
  • cup unsweetened cocoa
  • 4 large eggs
  • 1 cup buttermilk 
  • 4 tablespoons cornstarch
  • 3 tablespoons unsalted butter 
  • 1 tablespoon red food coloring
  • 2 teaspoons vanilla extract

FOR THE TOPPING:

  • 1 cup heavy whipping cream 
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Pre-heat the oven to 350°F for making the crust.
  • Food processor the chocolate graham crackers, sugar, and melted butter until the crackers are broken down into crumbs and the mixture is combined. 
  • Put the mixture into a pie dish that measures 9 inches in diameter. For 10-12 minutes, bake. Let cool completely before using.
  • The filling is made by mixing milk, cream, sugar, and cocoa in a medium saucepan and stirring until the sugar and cocoa dissolve. Over medium heat, cook the mixture until it becomes steamy and bubbles appear around the edges.
  • In the meantime, combine the eggs, buttermilk, and cornstarch. Whisk the heated chocolate mixture constantly into the egg mixture while adding it slowly.
  • Place the saucepan over medium-high heat after the mixture has been fully combined. As the mixture thickens, stir constantly with a spatula. Buttermilk may curdle if you allow it to boil (reduce heat if necessary).
  • Using a whisk, combine butter, vanilla extract, and red food coloring. To remove lumps, strain the mixture through a mesh strainer. Once the pie crust has cooled, pour in the filling.
  • The whipped topping is made by whipping the heavy whipping cream, sugar, and vanilla extract to soft peaks. After putting this on top of the pie, refrigerate it for at least two hours before serving.
  • For up to three days, store the pie in the fridge.
