Ingredients
  

  • 1 tablespoon vegetable oil, 1 turn of the pan
  • 4 tablespoons butter, divided
  • 1 pound ground chicken breast
  • 1 small McIntosh apple peeled and finely chopped
  • 1/4 cup pure maple syrup, eyeball it
  • 1 tablespoon grill seasoning blend
  • 1 teaspoon poultry seasoning
  • teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg, eyeball it
  • 4 jumbo/sandwich-size English muffins, fork split
  • 8 large eggs
  • Splash of cold milk
  • Salt and pepper
  • 1/4 pound Cheddar, thinly sliced or shredded

Instructions
 

  • With 1 tablespoon butter and 1 tablespoon oil, preheat the broiler and a medium skillet over medium-high heat.
  • Prepare chicken by mixing it with the apple, syrup, grill seasoning, poultry seasoning, cinnamon, and nutmeg, and scoring it into 4 sections. Prepare four large, thin patties and place them in hot butter and oil. On each side, cook for 5 minutes.
  • On a broiler pan, place fork-split muffins and toast them. Reserve toasted muffins with butter.
  • Add a tablespoon of butter to a second nonstick skillet over medium heat. In a mixing bowl, combine eggs, milk, salt, and pepper. Scramble until the desired doneness is achieved.
  • Fill each of 4 muffins half with 1 sausage patty, 1/4 of the eggs, and 1/4 of the Cheddar cheese. Set muffin tops into place and broil for 1 to 2 minutes to melt the cheese.
