Ingredients
  

  • 2 Bell peppers (sliced and seeds removed)
  • ½ cup Cooked white rice
  • ½ cup Stuffing mix
  • ¼ cup Butter divided
  • ½ cup Diced celery
  • ½ cup Diced onion
  • cup ¼ Diced bell pepper
  • 1 clove Garlic minced
  • 1 tablespoon Cream cheese
  • 4 ounces Baby shrimp
  • 2 ounces Imitation crab meat
  • 1 tablespoon Chopped dill
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon Chopped parsley
  • 2 tablespoon Chicken brot

Instructions
 

  • Using 2 tablespoons of butter, saute the diced celery, onion, red bell pepper, and garlic for about 6 minutes, or until the vegetables are tender.
  • Once the cream cheese has melted, remove it from the heat and stir it in.
  • Mix the sauteed vegetable mixture with the rice, stuffing mix, imitation crab, shrimp, Old Bay, dill, and parsley in a medium bowl. Gently mix.
  • As soon as the stuffing cubes start to soften, add the chicken broth. Stir well to combine. Adding broth one tablespoon at a time will help soften your mixture if it is still hard and dry.
  • Place about 3/4 cup of stuffing in each half of the bell pepper, mounding it on top and pressing it in gently.
  • Bake the peppers for 20-25 minutes in a 375-F oven or until they are heated through and fork-tender. Sprinkle each pepper with 1/2 teaspoon of butter.
  • Serve and Chill!
