Ingredients
  

  • 1 tablespoon Dry active yeast
  • ¼ cup Warm water
  • 5 tablespoons Unsalted butter
  • ¾ cup Milk
  • cup Canned pumpkin
  • cup Prune plum filling
  • cup Granulated sugar
  • 1 tablespoon Molasses
  • 1 tablespoon Honey
  • 1 tablespoon Salt
  • 1 1/2 tablespoon The ground cinnamon
  • 2 large Eggs beat
  • ¼ cup Pecan meal
  • 8 tablespoon Vital wheat gluten
  • 2 cups All-purpose flour
  • 2 cups Bread flour
  • 2-3 tablespoons Melted butter,

Fruits and Nuts

  • 1 cup Chopped walnuts
  • ¼ cup Chopped dried apples
  • ¼ cup Dried cherries
  • ¼ cup Dark raisins
  • ¼ cup Dry apricots (chopped) 
  • ¼ cup Golden raisins
  • ¼ cup Cranberries

Instructions
 

  • Bring warm water to a boil and then add the dry fruits to the water to soak them.
  • Let it soak for at least 20 minutes.
  • Pour warm water into a large bowl. Sprinkle yeast over the warm water.
  • Separately, mix the bread flour with all-purpose flour and set it aside.
  • Turn a low heat under a small saucepan and place it on the stove. After melting the butter in the saucepan, pour the milk into the melted butter after it has been removed from the heat.
  • Combine the milk puree with the dissolved yeast mixture.
  • After the two mixtures are combined one by one, add the remaining ingredients.
  • Add the canned pumpkins and plum filling to the pumpkin. Pour the honey and sugar over it. To the mixing bowl, add pecan meal, molasses, beaten eggs, and wheat gluten, and mix well.
  • Whip the mixture well with a hand mixer until it is well-consistent.
  • There are still a few ingredients that must be added to the mixture.
  • Adding 3-4 additional cups of flour to the mixture and kneading well will result in a soft and smooth dough.
  • Depending on the need, increase or decrease the quantity of flour.
  • Knead the dough in a bowl that has already been greased and let it stand for an hour in a warm place in order to rise.
  • Mix the nuts and fruits together. Grease the baking sheets.
  • Flour the surface lightly and place the dough on it. Divide the dough into halves and then sprinkle each half with the nuts and fruits. Sprinkle the nuts and fruits on each half of the dough after dividing it in half. Separately knead the sprinkled halves of the dough.
  • Bake the bread loaves in a loaf pan after shaping the dough into loaves.
  • Brush the top layer of dough with melted butter to grease again. Brush butter over it again after it has stood for another hour. Preheat the oven to 350 degrees and place the pans in it for approx 45 mins or until a thermometer reads 200°F in the center of bread.
  • A foil sheet can be used to cover the dough if its crust browns too quickly.
