Creamy Langostino Lobster Mashed Potatoes are a perfect side dish to any meal. They are creamy and fluffy, but not overly rich. They’re also a really convenient side dish to have on hand and easy to make. They’re perfect for a quick and easy side dish for breakfast, brunch, or lunch.
1cupCooked lobster chunks (½-inch chunks; tail and claw meat preferably)
½cupGrated cheddar cheese
2clovesGarlic ( minced)
2cupsChopped fresh chives
½tablespoonGround black pepper (Simply Organic Ground Black Pepper)
Instructions
Put potatoes into a pot and cover with 1 inch of cold water.
Then reduce heat to medium, cover, and simmer for 20 to 25 minutes, until potatoes are tender.
Butter should be melted over medium heat in a small saucepan. While constantly stirring, cook garlic for 45 seconds, until fragrant.
Put the cooling rack on a plate and let it cool.
Retain 1 cup of the cooking water after draining the potatoes. Using a potato masher, mash the potatoes until smooth, adding back the reserved cup of cooking liquid while doing so.
Continue mashing until the garlic-butter mixture is fully incorporated with the milk, cream cheese, salt, and pepper. Finally, fold in the lobster, cheddar, and chives.
