Ingredients
  

For the Brine

  • 5 Cups Coca-Cola
  • 1 tablespoon kosher salt
  • 10 sprigs Fresh thyme leaves
  • 4 cloves Garlic (Peeled and Sliced into Bits)
  • 4 teaspoons Mild hot sauce
  • 8 to 12 Chicken thighs

For the Seasoned Flour

  • 3 cups All-purpose flour or self-rising flour
  • 1 tablespoon Kosher salt
  • 2 teaspoons Ground black pepper
  • 2 teaspoons Smoked Spanish paprika
  • 1 ½ teaspoon Garlic powder
  • 1 ½ teaspoon Onion powder
  • 1 teaspoon Cayenne pepper

For the frying

  • 3 cups Peanut oil or Olive oil
  • 1 cup Lard (optional)

Instructions
 

Preparing The Brine

  • Add five cups of Coca-cola to a large metal bowl along with kosher salt. 
  • Coke and salt should be stirred together until completely dissolved. 
  • Garlic cloves, fresh chopped thyme, and hot sauce should be added. Stir thoroughly. Your brine is now ready.
  • The chicken thighs can now be added. Finely massage them with your hands. Put the metal bowl in the refrigerator for three to five hours to marinate. Cover the bowl with plastic and place it in the refrigerator.

Preparing the seasoned flour

  • A willie Mae's fried chicken's crispiness and crust depend on its seasoning. Take a wide shallow dish or plate to do this. Distribute 3 cups of self-rising flour evenly over the dish.
  • After that, add 1 tablespoonful of kosher salt, 2 teaspoons of freshly ground black pepper, 2 teaspoons of smoked Spanish paprika, 1 1/2 teaspoons of garlic powder, 1 1/2 teaspoons of onion powder, and finally 1/8 teaspoon of cayenne pepper. 
  • Set aside the dry ingredients after mixing them finely with a whisk.
  • Now you need to preheat the stove to 350 degrees Fahrenheit.
  • Add peanut oil to a heavy bottom Dutch oven and heat over medium heat. Make sure the temperature reaches 375 degrees on a thermometer.
  • Add the seasoning mix to the chicken thighs after they have been taken out of the brain. Shake the mixture well to remove the excess seasoning.
  • In the hot boiling peanut oil, carefully place the chicken thighs. Avoid placing more than four chicken thighs at once. While the cold chicken thighs are placed in the Dutch oven, the temperature of the oil will plunge. 
  • The chicken thighs should be fried for no more than five minutes on each side on high heat. They smell delicious as they cook. 
  • To drain off the extra moisture or oil, transfer the finished dish to a wire rack. 
  • As soon as you poke the chicken thighs with a knife, they should come out with clear juice. If not, place them on a baking sheet and bake until their internal temperature reaches 165 degrees Fahrenheit. Make sure it is done by using a meat thermometer.
