This is a super delicious side dish as well as a snack that you can easily make with some simple ingredients following an easy procedure. These creamy and savory potatoes get their name from the key ingredient that sets them apart - salt.
1/3 - 1/2cupfine sea salt, table salt, or Kosher salt,
1lbwhole mini potatoes, white or red or a combination of both
For topping after boiling:
2tbspbutter, melted
Chopped fresh herbs, optional
Instructions
Adding water to a pot will make it steam. Stir well to dissolve salt (keep an eye on the bottom of the pot for any settling). Then add the potatoes.
Make sure the potatoes are covered with water. Pour 1 cup of water into another measuring cup and add 1 1/2 - 2 Tbsp salt to it if necessary.
The potatoes are ready when they are fork-tender (about 15 minutes for mini potatoes after they are brought to a boil on high heat).
You can check the potatoes' doneness with a fork by poking into their center. Allow potatoes to dry outside after draining. Add potatoes and melted butter to a bowl, along with herbs, if using. Warm it up before serving.
