Ingredients

For salt potatoes:

  • 4 cups cold water
  • 1/3 - 1/2 cup fine sea salt, table salt, or Kosher salt,
  • 1 lb whole mini potatoes, white or red or a combination of both

For topping after boiling:

  • 2 tbsp butter, melted
  • Chopped fresh herbs, optional

Instructions

  • Adding water to a pot will make it steam. Stir well to dissolve salt (keep an eye on the bottom of the pot for any settling). Then add the potatoes.
  • Make sure the potatoes are covered with water. Pour 1 cup of water into another measuring cup and add 1 1/2 - 2 Tbsp salt to it if necessary.
  • The potatoes are ready when they are fork-tender (about 15 minutes for mini potatoes after they are brought to a boil on high heat).
  • You can check the potatoes' doneness with a fork by poking into their center. Allow potatoes to dry outside after draining. Add potatoes and melted butter to a bowl, along with herbs, if using. Warm it up before serving.
