A bit time taking, but this soup will be worth your patience. It will take roughly 2 hours to make this Nordstrom Tomato soup. You have to cook and cook the tomatoes and chicken stock and then puree the thickened soup. Add the cream for a velvety texture and season.
Crush the tomatoes by hand, dice the carrots and onions.
Take a 6-quart stainless steel pot and add unsalted butter to it. On medium flame, melt the butter. When it becomes foaming, add diced yellow onions and carrots. Cook for 15 minutes while stirring from time to time.
When the butter is getting brown from the bottom, add tomatoes. Mix well and then add chicken stock.
While stirring now and then keep cooking for about 90 minutes, so that the soup has attained a thick consistency. Then lower the heat so that the soup just keeps simmering gently.
To check if the flavor of the soup is sharp or sour, have some of it to taste. If acidic, add baking soda and mix well. Taste again and adjust if needed.
With the help of an immersion blender, puree the soup so that it becomes smooth.
Then add the heavy cream, black pepper, salt, and cayenne. Stir well to combine.
If needed, reheat the soup and then add basil leaves and stir. Garnish with your favorite herbs and serve. Bon Appetit!
