Tortillas de Harina Recipe

Ingredients
  

  • 3-½ cups All purpose flour
  • 1 tsp Salt
  • cup Pork lard/ olive oil/ butter
  • 1 cup Hot water

Instructions
 

  • Knead the dough by hand or with the mixer. For the mixer, add the flour, water, lard, and salt in a stand mixer bowl and knead at medium speed. An elastic dough will be formed.
  • Then use a damp kitchen towel to cover the dough in the bowl. Keep it aside unbothered for 15 minutes.
  • Flour a surface, and transfer the dough after 15 minutes to the floured surface. Knead it again for some time and make a large round ball of dough.
  • Take out the small portions from the dough ball and make small round balls of almost equal size. Make about 12-14 balls.
  • Cover the small balls with a kitchen towel or a cling film and leave them unbothered for 10 minutes.
  • Over medium flame, heat the cast iron skillet.
  • Then flour the working surface and place a small dough ball on it. Flatten the ball with your hand and roll it into a thin and round tortilla using a rolling pin. 
  • Cook the tortilla in the heated skillet for 20 seconds. Flip and cook from the other side so that it has some dark spots and is puffy. Flip again a few more times and cook both sides until they are done nicely.
  • To keep them warm and soft, place them between kitchen towels. Repeat the same procedure with other dough balls.
