Longhorn Redrock Grilled Shrimp Recipe

Ingredients
  

  • 20 Large shrimps (cleaned, peeled, and deveined. Tails should be unharmed)
  • 2 Fresh juice of limes
  • Fresh juice of limes = 6 wedges of 1 lime

For Guacamole Ranch Sauce:

  • 1 Ripe avocado
  • ½ tsp Cumin
  • ½ tsp Salt
  • 1 Fresh juice of lime
  • ½ cup Ranch dressing
  • Chopped cilantro

For Marinade

  • ¼ tsp Salt
  • ½ tsp Cumin
  • ¼ tsp Chili powder
  • 2 oz (¼ cup) Salad oil
  • 2 tbsp Chopped cilantro
  • 1 Fresh juice of lime

Instructions
 

  • Using a sharp knife, cut the avocado in half, keeping the pit intact. Remove the pit once the avocado is cut in half.
  • Gently peel the halves of the avocado and then scratch them a little.
  • Take a blender and add peeled avocados along with all other ingredients.
  • Blend them so that a smooth mixture is obtained. Store this mixture in the refrigerator in an airtight container.
  • Now that the dipping sauce is ready, take the bamboo skewers and place one lime wedge on them each.
  • Then take the peeled and cleaned shrimps and place them on the bamboo skewers in a manner that they have attained a U-shape. You can do this by first pinning the large part and then the tail. Pin 5 shrimps on each skewer.
  • Then take a bowl and prepare the mixture for marinade by mixing all the marinade ingredients as mentioned in the ingredients section. Make two portions of this marinade mixture.
  • With one portion of the marinade, brush the shrimps pinned on bamboo skewers from all sides.
  • When all the shrimp have been brushed, store them in a covered container and set them aside unbothered in the refrigerator.
  • When the shrimps have gotten adequate marination, take them out. Grill each side on a medium heated grill for 3 minutes or until they are pink and firm.
  • Transfer them to the serving dish. Trickle down the second portion of the marinade mixture on the grilled shrimp. Also, squeeze the grilled limes on the shrimp.
  • Serve the mouth-watering Redrock shrimp with Guacamole Ranch dipping sauce. Bon Appetit!
