Bacon Jam Recipe

This easy recipe combines brewed coffee, sweet onions, bacon, balsamic vinegar, and water until it becomes the smooth mixture needed for cooking.This jam tastes just like the real thing, but is much healthier, using real bacon instead of store-bought bacon creme paté.

Ingredients
  

  • 1 pound thick-cut bacon
  • 2 extra large sweet onions, quartered and thickly sliced
  • ½ cup brown sugar, use coconut sugar for paleo
  • ½ cup water
  • cup strong brewed coffee
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Place the bacon slices in a large frying pan and cut them into half-inch slices. When the bacon pieces are cooked, they will come apart. For about 10 minutes, cook the bacon over medium-high heat while stirring frequently until it is cooked but still chewy. It's okay to have a few crispy bits in the bacon. To remove the bacon, use a slotted spoon.
  • Remove all but 1 tablespoon of the bacon drippings. During the next 8-10 minutes, add the onions to the pan and reduce the heat to low. Add the sugar and stir well. After 20 minutes, the onions will have caramelized.
  • Turn the heat up to medium, add the bacon, coffee, and water, and stir well. Cook the onions for about 30 minutes, stirring every five minutes, until they become thick and jam-like. After the balsamic vinegar has been added, remove the pan from the heat. Salt and season as needed.
  • It can be used immediately or refrigerated for up to a week. Before serving, let it come back to room temperature. After you remove it from the fridge, there will be little white fat spots. The jam will disappear as it reaches room temperature.
