Ingredients

Crust Ingredients:

  • 3 ½ cups Fruity Pebbles Cereal
  • 3 cups mini marshmallows
  • 2 tablespoons unsalted butter

Cheesecake Filling Ingredients:

  • 16 oz cream cheese softened
  • ¼ cup Powdered sugar
  • 1 teaspoon Vanilla
  • 7 oz tub marshmallow creme
  • 1 ½ cup cereal lightly chopped

Instructions

  • Mix cereal, marshmallows, and butter in a microwave-safe bowl. For two-three minutes, microwave uncovered on high. Microwave the marshmallows until they puff up.
  • Stir the marshmallows and butter into the cereal once the marshmallows are soft, then remove the bowl from the microwave. Place the mixture on a pie plate that has been lightly sprayed or buttered.
  • A crust will form when you press the mixture into the pan and up the sides. Prepare the filling while the crust is firming.
  • Make the cream cheese mixture by mixing cream cheese, powdered sugar, and vanilla until smooth and creamy. Mix the filling together with the marshmallow creme. With a spatula, stir the additional cereal into the filling until it is well-mixed.
  • After the crust has been prepared, pour the filling over it and smooth it with the spatula. After placing the cheesecake in the refrigerator, allow it to firm up for at least 1-2 hours. It can also be frozen for about 30 minutes.
  • Extra cereal or sprinkles can be sprinkled on top if desired.
