Ingredients
  

  • 1/2 tablespoon kosher salt
  • 1 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 1 teaspoon paprika 
  • 2 teaspoons dried oregano leaves
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground dried ginger
  • 1/4 teaspoon cumin 
  • 1/4 teaspoon coriander 
  • 1/4 teaspoon cayenne (optional)

Instructions
 

  • Make sure the grates are clean and preheat the smoker to 225 degrees.
  • Using a clean paper towel, pat dries the chicken legs.
  • Prepare the dry rub by combining the ingredients in a small bowl.
  • Ensure that all nooks and crevices of the chicken legs are covered with dry rub.
  • Close the lid of the smoker and place the chicken legs inside.
  • In order to reach 160 degrees Fahrenheit, let chicken legs smoke for approximately one hour.
  • Heat up the smoker to 500 degrees before removing the chicken legs.
  • Place the chicken back on the smoker and sear it for 1-2 minutes on each side. Rotate until the internal temperature reaches 165 degrees Fahrenheit.
  • After removing the chicken from the smoker, let it rest for five minutes.
