Panera Chipotle Chicken Avocado Melt Recipe

Ingredients
  

  • 2 flat loaves of focaccia bread I used garlic herb
  • 6 oz shredded rotisserie chicken
  • 1 avocado sliced
  • ¼ cup mayo
  • 6 chipotle peppers in adobo sauce
  • ¼ cup chopped cilantro
  • ¼ cup Peppadew peppers chopped (or sweet & hot cherry peppers)
  • 4 oz sliced gouda
  • 2 tablespoon water

Instructions
 

  • Chop the chipotle peppers in adobo and combine them with mayo in a small bowl. Place in a bowl and stir well.
  • Slice each flat loaf of focaccia into four pieces. It will take you 8 squares to complete the puzzle.
  • Each slice should be spread with chipotle mayo.
  • ½ slice of bread should be topped with cheese, avocado slices, shredded chicken, cilantro, and peppers.
  • Finish with the remaining slices. Place the sandwiches in a skillet over medium-high heat.
  • Once they are cooked for 2-3 minutes, flip them carefully with a spatula and cook for 2 more minutes.
  • Pour the water into the pan and tilt it gently to one side. Cover it and let it steam for 1 minute.
  • Don't forget to remove the cover before enjoying it!
