Panera Chipotle Chicken Avocado Melt Recipe

- 2 flat loaves of focaccia bread I used garlic herb
- 6 oz shredded rotisserie chicken
- 1 avocado sliced
- ¼ cup mayo
- 6 chipotle peppers in adobo sauce
- ¼ cup chopped cilantro
- ¼ cup Peppadew peppers chopped (or sweet & hot cherry peppers)
- 4 oz sliced gouda
- 2 tablespoon water
Chop the chipotle peppers in adobo and combine them with mayo in a small bowl. Place in a bowl and stir well.
Slice each flat loaf of focaccia into four pieces. It will take you 8 squares to complete the puzzle.
Each slice should be spread with chipotle mayo.
½ slice of bread should be topped with cheese, avocado slices, shredded chicken, cilantro, and peppers.
Finish with the remaining slices. Place the sandwiches in a skillet over medium-high heat.
Once they are cooked for 2-3 minutes, flip them carefully with a spatula and cook for 2 more minutes.
Pour the water into the pan and tilt it gently to one side. Cover it and let it steam for 1 minute.
Don't forget to remove the cover before enjoying it!
