Primavera Stuffed Chicken is a classic favorite that’s a nice change from the standard chicken breast. A classic chicken breast is made of standard boneless chicken breasts with skin and bones.
1zucchini, halved lengthwise and thinly sliced into half-moons
3mediumtomatoes, halved and thinly sliced into half-moons
2yellow bell peppers, thinly sliced
½red onion, thinly sliced
2tbsp.extra-virgin olive oil
1tsp.Italian seasoning
Kosher salt
Freshly ground black pepper
1cupshredded mozzarella
Freshly chopped parsley, for garnish
Instructions
Prepare the oven by preheating it to 400 degrees. Stuff chicken breasts with red onions, zucchini, tomatoes, and bell peppers before cutting slits through them.
Season with Italian seasoning, salt, and pepper and drizzle with oil. Serve with mozzarella sprinkled on top.
In a baking dish, bake chicken until it is cooked through and the inside is no longer pink, about 25 minutes.
