16medium-sized raw shrimp (peeled and deveined with tails removed, chopped into ½" pieces)
4-5ozcream cheese
1large handful of fresh spinach leaves (roughly 1 cup)
1/4teaspoonPrimal Kitchen New Bae seasoning*
4center-cut salmon filets (4-6 oz per person)
1/4cuppanko breadcrumbs
kosher salt and black pepper
Parsley for garnish, if desired
Instructions
Preheat the oven to 400 degrees Fahrenheit (200 C).
Over medium heat, melt butter or olive oil in a large pan. Stir minced garlic cloves frequently until soft and fragrant (but not brown), about 1 minute. Add chopped shrimp and cook, stirring often, until just opaque, about 2-3 minutes. Then turn off the heat and mix in the cream cheese and spinach, until everything is well-coated, then add New Bae seasoning. If necessary, adjust the seasonings.
Place salmon fillets skin side down on parchment paper or on a sheet pan sprayed with oil. Then pat it dry. Make a 1/2-inch slit down the center and pull it apart to stuff the shrimp mixture.
Add salt and pepper to the filet, and spoon the mixture into the slit, allowing it to spill out slightly.
For medium-cooked fillets, top with panko and bake for 15-18 minutes at 400F. The top of the panko should be lightly browned. If desired, garnish with parsley.
