Qdoba Tortilla Soup Recipe

Qdoba Tortilla Soup is a classic Tex-Mex dish that everyone loves. In this recipe, we are making a delicious Mexican-inspired tortilla soup recipe that is made entirely of vegetables, Jalapenos, and Jack Cheese.

Ingredients
  

  • 1 tablespoon Vegetable Oil
  • ½ cup Onion (minced)
  • ½ cup Poblano Pepper (diced)
  • 3 cups Soup Broth (Chicken or Vegetable)
  • 4 corn Tortillas
  • 1 tablespoon Garlic (minced)
  • 2 teaspoon Jalapenos (seeded and diced)
  • ½ teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 2 cups Canned Fire-Roasted Tomatoes (diced)
  • ½ cup Tomatoes (crushed)
  • cup Shredded Chicken
  • ½ cup Monterey Jack Cheese (shredded) (Optional)
  • Tortilla Chips, Crushed (Optional)

Instructions
 

  • Add the oil, onions, and poblanos to a soup pot and sauté for 5 minutes over medium heat.
  • Stir in the garlic, jalapeno, cumin, and chili powder. Continue to cook for 5 minutes more.
  • Combine the soup broth with the tortillas in a blender. Puree until almost smooth.
  • Bring the mixture of tortillas and broth to a boil, then add the fire-roasted tomatoes and crushed tomatoes.
  • Reduce heat and add the spice mixture and shredded chicken. Cook on medium-low heat for 15 minutes.
  • Add the crushed tortilla chips and Monterey Jack cheese for garnish and season to taste.
