Ingredients
  

  • Black beans, 30 ounces (or 3 to 4 cups of cooked black beans)
  • 1 cup White onion (chopped)
  • ½ cup Celery (chopped)
  • ½ cup Carrot chopped
  • 2 tablespoons Vegetable oil
  • ½ cup Red bell pepper chopped
  • 2 teaspoons Garlic (minced)
  • 32 ounces Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 1 1/2 teaspoon Lemon juice
  • 1 tablespoon (with 1 tablespoon of water) Cornstarch mixed

Instructions
 

  • Put two tablespoons of vegetable oil in a large pot.
  • You can also add carrots, onions, and celery. Add a pinch of salt to the vegetables to help them release water.
  • Sauté vegetables until onions become translucent.
  • Add the bell pepper and garlic.
  • Continue sautéing vegetables until garlic becomes fragrant.
  • If you are using canned black beans, rinse them to remove excess starch.
  • To the pot, add beans and vegetable broth.
  • To the soup, add 1 teaspoon of salt and 1 teaspoon of cumin.
  • To heat the soup through, allow it to simmer for about 10 minutes.
  • Taste the soup and add more salt if necessary.
  • Add the cornstarch and water mixture to the soup. The mixture will thicken the soup.
  • Add the lemon juice just before serving.
