- Romaine Lettuce (2 to 3 heads cut Romaine)
- 4 grilled Asparagus Spears (cut)
- 3/4 cup Green Beans (cut)
- ½ cup Roasted Golden Beets (cubed)
- ½ Avocado (cubed)
- 1 cup Cucumber (peeled and cubed)
- Cherry Tomatoes (cut in half)
- Garbanzo Beans (rinsed)
- ¼ cup Cooked Quinoa (Far East – Rosemary Olive Oil)
- 3 tabelspoons Slivered Almonds
- Sunflower Seeds (to sprinkle on top)
- Cracked Pepper (optional)
For The Dressing
- 1 Garlic clove (finely chopped)
- 1/4 cup Champagne Vinegar
- ½ cup Olive Oil (extra virgin)
- 2 tablespoons Dijon Mustard
- 1 tablespoon Fresh Lemon Juice
- 1 tablespoon Agave Nectar
- ½ teaspoon Salt
- ½ teaspoon Freshly Ground Black Pepper
Whisk together champagne vinegar, olive oil, Dijon mustard, lemon juice, and agave nectar in a medium bowl.
Sprinkle with salt and pepper and add finely chopped garlic. Blend into a salad dressing.
Place the lettuce leaves on the plate, and then add the asparagus, beans, beets, and avocado.
You can now add cucumber, tomatoes, and garbanzo beans to it. You can also sprinkle slivered almonds on top.
Add salad dressing and sunflower seeds, then finish with cracked pepper.
