1 ½ poundSweet potatoes washed and scrubbed (equals about 3 cups when softened and peeled)
1can-12 ozEvaporated milk
1cupLight brown sugar
2eggs
5tablespoonsUnsalted butter (melted or vegan butter)

1teaspoonGround nutmeg
½teaspoonGround cinnamon
½teaspoonGround cloves

By greasing a 9-inch pie pan, you can prepare it for baking.
Use an almond flour pie crust, or buy one that comes with its own pie pan if you don't want to make your own.
Easy and fast way to soften and peel sweet potatoes is to use an Instant Pot pressure cooker!
Put the stainless-steel inner pot into the Instant Pot and fill it with water to the ½ mark.
Scrub the sweet potatoes and add them to the pot of water.
To loosen the potato skin, close the lid of the Instant Pot (make sure the valve is up - set for sealing) and cook on high for 12 minutes.
After cooking time has finished, allow at least 12 minutes for a natural pressure release.
The lid of the Instant Pot can be opened by moving the valve to 'venting' and releasing any remaining pressure manually.
Pour the hot water and sweet potatoes into a colander in the sink to drain them.
Then, peel and discard the skin of the sweet potatoes when they're cool to the touch.
Make sure you have 3 cups of sweet potato flesh.
Either blend or blend with an electric mixer the sweet potato flesh, evaporated milk, brown sugar, egg, melted butter, vanilla extract, ginger, nutmeg, cinnamon, ground cloves, and salt.
In a blender or food processor, combine the ingredients until smooth. Prepare the sweet potato mixture and fill the pie crust.
For a conventional oven, bake the sweet potato pie for 28-30 minutes, or for an Instant Pot Omni Plus oven, cook for 24-26 minutes, or until the pie is puffed and firm to the touch.
