Ingredients

  • 3 tablespoons  Extra virgin olive oil
  • 1 tablespoon Butter
  • 2 pounds  Beef stew meat
  • 3 cloves Garlic (minced)
  • 1 medium Onion, diced
  • 1 can Beer (No-alcohol)
  • 4 cups Beef broth (more as needed)
  • 1 tablespoon Worcestershire sauce
  • 2 to 3 tablespoons  Tomato paste
  • 1 1/2 teaspoons Sugar
  • ½ teaspoon Paprika
  • ½ teaspoon Kosher salt
  • Freshly ground black pepper
  • 2 Carrots (Roughly sliced)
  • 2 Parsnips (roughly sliced)
  • 1 Small turnip (roughly sliced)
  • 2 tablespoons All-purpose flour (optional)
  • Minced fresh parsley (for garnish)

Instructions

  • Melt the butter and oil in a pan and brown the beef.
  • After the beef has browned, remove it from the pan and set it aside.
  • Approximately 3 minutes later, add the garlic and onions and cook until soft but not browned.
  • Add the beer (I use an alcohol-free beer), beef broth, Worcestershire sauce, tomato paste, sugar, paprika, salt, and pepper.
  • Bring the beef back to a simmer, cover it, and let it simmer for one and a half to two hours, until it is very tender.
  • If the liquid level falls too low, add more broth.
  • Continue simmering the carrots, parsnips, and turnips for 30 minutes, or until the vegetables are tender.
  • If the stew is still too soupy, remove one cup of the cooking liquid and stir it into the flour. Stir the flour mixture into the pan once more.
  • After the stew has thickened, let it simmer for 10 minutes. If the meat is tough, continue cooking it until it is very tender.
  • Just before serving, stir in the parsley.
  • With toast or a side dish of your choice, you can serve this recipe.
